This easy baked spinach and mushroom frittata is filled with healthy veggies and can be served for breakfast, brunch, lunch, or even a light meatless dinner! Directions cook spinach, drain and squeeze out excess water. Saute mushrooms and onion in butter in a large skillet until tender.
