Shrimp Ceviche Baja Style

Chop cucumbers, tomatoes, cilantro, red onions and jalapeƱo chile. Transfer the mixed cut vegetables into the shrimp bowl and mix well to incorporate. In a blender add serrano chile with garlic and clamato.

Ceviche is a popular beach snack that can be found along the Mexican coast. It's served cold and is perfect for hot days. A variety of seafood can be used in place of shrimp.
1 pound shrimp deviened
4 tomatoes
1 cucumber
1/2 yellow onion
3 cloves garlic
1 green onion (green part only)
2 tablespoons cilantro/coriander
*1 jalapeno or serano
2-3 cups lime juice
1/2 teaspoon ground cumin
1 teaspoon ground coriander seed

*fresh chilies are typically used with ceviche but I use ground chili powder for this recipe. I like using ground chili so the entire dish is more evenly spiced. It also gives you more control over the spice level. I end up adding fresh habanero to the top of my bowl for extra flavor.
