In this delicious Mexican recipe, meaty bone-in pork chops are smothered in a wonderful tomato salsa gravy, this is one of my Ron's favorite Mexican dish, he often asked me for it, I hope you give it a try, and please let me know if you do.❤

4 bone-in pork chops (1 inch thick)
4 medium roma tomatoes
1 serrano pepper (optional)
1 small green bell pepper (cut in strips)
1 small yellow onion (julienned)
2 celery ribs (diced)
2 leg green onions chopped (green and white parts)
1/2 tsp whole cumin
1/2 tsp peppercorns
3 large garlic cloves
1/2 tsp dry oregano
1 bay leaf
2 & 1/2 Tbsp all purpose flour
pepper (to your liking)
salt (to your liking)
small bunch cilantro
2 C. chicken broth
3 Tbsp canola
