Mexican Christmas Beet Salad

Ingredients 1 can (20 ounces) unsweetened pineapple chunks, drained 1 can (15 ounces) sliced beets, drained 2 medium navel oranges, peeled and sectioned 1 large apple, sliced 1 medium banana, sliced 1 medium jicama, peeled and julienned 2 to 3 cups torn romaine 1/2 cup dry roasted peanuts 1/2 cup. Traditional mexican beet salads nearly always pair the sweetness of beets with a savory ingredient, most often a mild white cheese, usually queso fresco. Some type of fruit is usually incorporated, with citrus being a common choice, either orange in the salad, lime in the dressing, or both.

Beet salad

Ingredients:

● 1 cup Jicama
● 1 cup beet
● 1 cup carrot
● 1 cup orange juice
● 2 limes
● 1 tsp salt
● 1 tsp Chili powder
● 1 tbsp LA COSTEÑA MEXICAN HOT SAUCE

Directions:

Place a grater on a plate, then on the coarse side, carefully grate the jicama, carrots, and beet
in long strokes. In a bowl add the jicama, carrot, beet, lime juice, orange juice, salt, chili
powder and MIX. Serve in a cup and compliment with LA COSTEÑA MEXICAN HOT SAUCE!!
