Instant Pot Southwest Quinoa

Instructions heat olive oil in a large skillet over medium high heat. Add garlic and cook, stirring frequently, until fragrant, about 1 minute. Add the water or vegetable broth, tomatoes, and a pinch of taco seasoning and salt.

Southwest Quinoa Casserole
First, make the quinoa in your Instant Pot. You will need:
1 lb quinoa (around 2 c)
2 c water
Add the quinoa and water to the Instant Pot electric pressure cooker (or any electric pressure cooker!) and make sure the vent pipe is set to "sealing." Press the "manual" button and adjust the time down to just 1 minute. That's it! When the beep comes to say that it's done, let it come down to pressure naturally for the best, fluffiest, most delicious quinoa ever. While you're waiting for the quinoa, prep the other healthy ingredients:
1 can (15 oz) Spicy black beans
1 can (15 oz) Hot chili beans (I used Simple Truth organic brand, available from Vitacost.com and lots of other places)
1/2 bell pepper (red, orange, or yellow) chopped
1/2 medium sweet onion (like Vidalia or Walla Walla or Mayan) chopped tiny (I love my Alaskan Ulu knife for this)
1 c salsa
1 c vegan cheese sauce (find my recipe here: youtu.be/pw6k5E600Dc )
8 oz greens (I used a baby spinach / baby kale blend)
1 c organic corn (use organic because so much corn is GMO!)
1/4 c ground flaxseed meal
Spices:
2 t chili powder
2 t onion powder
1 t ground cumin
2 t garlic

When the quinoa has achieved natural pressure release but is still very hot, add in your greens and mix well to slightly cook and wilt them. Then add all the other ingredients and mix well. That's it! A delicious, nutritious dinner in 20 min from start to finish. Great for hectic week nights! Best of all, it tastes great and even BETTER the next day as leftovers in your lunch. Enjoy!
