Easy Sticky Toffee Pudding

Add ingredients to shopping list directions step 1 combine dates and tea in a bowl and soak for 15 minutes. Step 2 preheat the oven to 350 degrees f (180 degrees c). Step 3 cream 3/4 cups plus 2 tablespoons sugar and butter until light and fluffy.

This is not your traditional sticky toffee pudding but my quick and easy version. It is light, fluffy and delicious. It’s a regular bake here as it is so quick to make and I usually have a jar or two of particularly nice caramel in the cupboard.

Recipe for: Easy Sticky Toffee Pudding

Equipment:
Mixing bowl & 2nd bowl
Weighing scales
Wooden spoon
Electric whisk or hand whisk
Small oven proof bowl

Ingredients:
200g self-raising flour
1 ½ tsp baking powder
100g soft brown sugar
Salt
120ml milk
2 eggs
6 tbsp melted butter
2 tsp vanilla extract
A jar of good caramel sauce

Method:
1)Preheat oven at Gas 3/ 170’C
2) Butter a small oven proof bowl
3) In a mixing bowl, add 200g self-raising flour, salt, 1 ½ tsp baking powder & 100g soft brown sugar (sift if necessary)
4) In another bowl, add 120ml milk, 2 eggs, 2 tsp vanilla extract & 6 tbsp melted butter
5) Whisk until frothy
6) Pour this into dry ingredients and mix with a wooden spoon
7) Pour this into your prepared bowl (the mixture is quite wet)
8) Bake for 30-35 mins
9) Heat up your toffee sauce and pour over the baked warm pudding
10) Serve with custard or ice cream
