Blueberry Croissant Bread Pudding

Vanilla extract ½ c. Frozen blueberries 2 t. Coarse sugar preheat the oven to 375° f.

✨ I N G R E D I E N T S
Blueberry Croissant Bread Pudding Recipe
+ 18.5 oz. of cubed croissants
+ 3/4 cup of dark brown sugar
+ 3/4 cup of white sugar
+ 5 large eggs
+ 1/4 teaspoon of salt
+ 4 cups of heavy cream
+ 3 teaspoons of vanilla bean paste (or vanilla extract)
+ 2 handfuls of blueberries on top
+ powdered sugar (for dusting)

Bourbon Sauce
+ 5 tablespoons of bourbon (or to taste)
+ 3/4 cup of brown sugar
+1 teaspoon of vanilla extract
+1/2 cup of unsalted butter
+ 1 cup of heavy cream
+1/2 teaspoon of cinnamon

✨R E C I P E
1. Cut your croissants into 1 inch pieces.
2. If you are using a fresh croissants, toss your bread cubes into a pan and bake them at 250°F for 10 minutes. This will allow your bread to dry up so it can soak the wet mixture we will make. If you are using old bread, skip this step and simply set your cubes aside.
3. In a large bowl, whisk together eggs, sugars, vanilla bean paste OR vanilla bean extract, salt, and heavy cream. Whisk all ingredients until well combined.
4. Once croissant bread cubes are out of the oven and have been cooled, begin adding them to the wet mixture. Carefully fold the croissant cubes into the mixture making sure that all bread pieces are well soaked and submerged in the mixture. Set aside for at least about 2-3 hours. You can even let this sit overnight. The more time the bread has to soak up the mixture the better the bread pudding will taste.
5. Meanwhile, make the bourbon sauce and butter your 9x13inch casserole dish.
6. Preheat oven to 350°F.
7. Once the bread has absorbed most of the wet mixture and the bread is well soaked begin pouring bread into muffin pan. Evenly spread croissant cubes in pan as you place the bread into the pan and ensure they are tightly packed in. Top with fresh blueberries.
8. Bake for 1 hour or until fully cooked. Remove croissant bread pudding from oven and after it has cooled for about 10 minutes, lightly dust it with white powdered sugar.
9. Serve bread pudding for brunch with the bourbon sauce or for dessert with a scoop of vanilla ice cream as well! :)

Bourbon Sauce
1. In medium sauce pan, melt butter.
2. Pour in dark brown sugar, heavy cream and cinnamon, whisking well after each new addition.
3. Turn up heat and allow the sauce to come to a boil while whisking.
4. Let it boil for about 1 minute.
5. Remove from heat and pour in bourbon and vanilla extract. Whisk until smooth and enjoy! :)
