Apricot Glazed Cornish Hens

Rinse defrosted hens in cold running water. Drain, pat dry inside and out with paper towel. Combine preserves, vinegar and soy sauce.

Today, I made Apricot-Glazed Cornish Hens.

Ingredients:
3 Cornish Hens
1/2 cup apricot preserves
1/4 cup balsamic vinegar
Salt and pepper

Directions:
Preheat oven to 425 degrees.
Pat Cornish Hens dry and place on wire rack on top of cookie sheet.
Salt and pepper them.
Combine apricot preserves, balsamic vinegar, and some salt and pepper.
Glaze Cornish Hens.
Cook for 15 minutes.
Take out of the oven and turn the oven down to 350 degrees.
Glaze Cornish Hens.
Cook for 15 minutes.
Glaze Cornish Hens.
Cook for 15 minutes.
**Check that the internal temperature of each is 180 degrees, if not, continue cooking and check it at 10-15 minute intervals until it reaches that temperature**
Let sit for 10-15 minutes on top of counter before serving.
